Spring Onion Egg Stir Fry
Healthy and delicious spring onion egg stir fry recipe
Spring onions (Scallions) add great nutritive and taste value to a dish and can be used in different ways.Spring onions (aka. Scallions, green onions, salad onions, table onions, green shallots) are low in Saturated Fat, Sodium, and Cholesterol. They are also high in Dietary Fiber, Vitamin A, Vitamin C, Vitamin K, Folic acid, Calcium, Iron, Potassium, Manganese, Thiamine, Riboflavin, Magnesium, Phosphorus and Copper. Scallions are also ideal for weight loss and maintaining optimum health.
- 1 bunch of fresh spring onion (scallions)
- 2 eggs
- 1 large onion finely chopped
- 1/4 tsp. of mustard seeds
- 1/4 tsp. of cumin seeds
- 1/4 tsp. of red chilli powder
- 1 tsp of vegetable oil
- salt as required
Wash the spring onions thoroughly in warm water, make sure you remove all the mud stains from its roots. Chop both the shoots and the roots, some discard the roots but the roots are equally nutritious. They can be used as a replacement for regular onions.
Heat the oil in a pan and add mustard seeds, when it splutters add cumin seeds, chopped onion and curry leaves.
Add the chopped onions that we obtained from the spring onion roots and fry for a minute and add then add green shoots.
Add salt, chilli powder and saute.
Add the eggs and fry it for 3-4 minutes until it gets to bhurji consistency. Add oil as you fry to prevent the eggs from sticking to the pan.
Remove from flame and serve hot.
