Flavorful and easy to make rice recipe with coconut
Coconut rice is a traditional south Indian recipe with lot roasted gram mung daal,green chillies etc…I saw this recipe in a magazine. Looks so simple and easy.Tried out and it was delicious.We can have this rice without any side dish.Dear friends,do try out this coconut rice.I am sure you all will like this.
1 cup of Grated Coconut
2 up of Rice
2 no of Green chilli
1/2 spn. of mustard seeds.
1/2 spn. of cumin seeds
2 tbsp. of roasted gram(pottukadala)
2 tbsp. of mung daal(uzhunnuparippu)
2 – 3 no of red chillies
1/8 spn. of Asafoetida
2 springs of curry leaves
1 spn. of coriander leaves
1 spn. of Ghee/Butter
salt as required
Cook rice drain and keep aside.
Heat ghee/butter in a pan
Splutter mustard seeds.
Add cumin seeds,roasted gram and mung dal. Fry till mung dal turned in to golden brown color.
Add chopped green chillies,chopped coriander leaves and curry leaves.Saute for a while.Add asafoetida and stir.
Add grated coconut and Stir well.
Add cooked rice and salt.Mix well and serve hot with pappad.
