Cilantro Rice | Coriander rice
Delicious and healthy rice with coriander leaves
Easy cilantro rice recipe with coriander leaves and grated coconut. Rice mixed with vegetables and leaves is a very common dish in Indian cuisine like tomato rice, cauliflower rice,pineapple rice etc… Coriander or cilantro is a good source of dietary fiber,manganese, iron,vitamin C,vitamin K and protein.We can also make chutney with cilantro. This recipe is very simple and easy to make. Hope you all will like this recipe.
How to make cilantro rice/coriander rice
2 cup of of pulao rice/biryani rice/sona masoori
2 cup of chopped coriander leaves
2 large no of potatoes(optional)
1 no large onion
1 small piece of ginger
3 no of garlic cloves
1 cup of grated coconut
3 no of green chillies
1 tbsp. of lemon juice
1 spn. of fennel seeds
3 piece of bay leaves
2 no of cinnamon sticks
Wash and soak rice in water for 15 minutes.
Wash and cut potatoes in cube shape and shallow fry. keep aside.
Gently crush grated coconut along with coriander leaves,green chillies,garlic and ginger. Keep aside.
Heat oil in a pan. Add all the ingredients mentioned under whole spices. Fry till they become fragrant.
Add sliced onion and fry till it become golden brown color.
Add crushed mix and fry for 2-3 minutes.
Add soaked rice and mix well. Add lemon juice and salt. Mix well and fry for 2-3 minutes.
Add water (for 1 glass of rice I used 1 1/2 glass of water)
Cover lid and cook for 15 minutes. (You can also cook in pressure cooker. Up to 2 whistle in medium flame)
Add fried potatoes and mix well. Serve hot with raita.
