Beetroot Pachadi recipe
Colorful healthy curry for lunch
- Beetroot are excellent sources of anti-oxidants.
- Beetroot is very good for Alzheimers,depression, diabetes,heart disease etc…
- Beetroot contains betacyanin which gives it its characteristic deep red colour.
- Betacyanin is a powerful antioxidant and cancer-fighting agent.
2 cup of Grated beetroort
1 cup of Curd
1/4 S of Turmeric powder
1/2 cup of grated coconut
2 no of Green chillies
1/2 S of Cumin seeds
1 S of Mustard seeds
2 springs Curry leaves
1/2 S of oil
Salt as required
Cook grated beetroot with little water and a pinch of salt till done.
Grind coconut along with green chillies and cumin seeds to a smooth paste.Keep aside
When the beetroot get cooked add curd and salt.Mix well and reduce flame to low.
Add coconut paste and cook until it starts boling.Turn off the flame
Heat oil in a pan.
Splutter mustard seeds.Add red chillies and curry leaves.Saute for a while.
Add this seasoning to curry and mix well.Goes well with rice
