Beetroot Pachadi recipe
Colorful healthy side dish for lunch.
Pachadi dishes are commom in kerala cuisine. We used to make many varieties of pachadi with apple,bitterguard,carrot etc… I got this Beetroot pachadi recipe form a magazine. Tried out and that was easy to prepare and tasty. Do try it out this beetroot pachadi. I have already tried pachadies like Carrot pachadi,Pavakka pachadi,Cucumber pachadi and Apple pachadi .

How to make beetroot pachadi
2 cup of Grated beetroot
1 cup of Curd
1/8 S of Turmeric powder
1/2 cup of grated coconut
2 no of Green chillies
1/2 S of Cumin seeds
1 S of Mustard seeds
2 springs Curry leaves
1/2 S of oil
Salt as required
Grind coconut along with green chillies and cumin seeds to a smooth paste.Keep aside
Cook grated beetroot with little water and a pinch of salt till done.
When the beetroot get cooked add coconut paste and cook till it starts boiling. Mix well and reduce flame to low.
Add curd and salt. Mix well and turn off the flame. Do not allow the curry to boil after adding curd.
Heat oil in a pan.
Splutter mustard seeds.Add red chillies and curry leaves. Saute for a while.
Add this seasoning to curry and mix well. Goes well with rice.
